Did you know that most non-herbal teas, such as black tea or white tea, are actually green tea? ( Camellia sinensis )?
The degree of oxidation [we should probably use the term oxidation for our description of red tea, as it differs from fermentation] determines the type of tea. Green tea is not oxidized at all, but rather steam-rolled immediately after harvesting (the exact process still needs clarification) , while black tea (also known as Wild Orchard Red Tea) is fully fermented, which turns the leaves black, and oolong is only partially fermented. The different degrees of oxidation result in very different flavors and nutrient contents of the tea, with green tea having the highest antioxidant content (?) , although all teas made from Camellia sinensis leaves are rich in antioxidants.
What is green tea?
"Green tea" refers both to the grassy-tasting tea that is brewed and drunk, and to the plant from which it is made (not to be confused with the tea tree, Melaleuca alternifolia ). The scientific name of the green tea plant is Camellia sinensis . It is the same plant from which most non-herbal teas are made. Green tea originated in China and is primarily cultivated in East Asia, mainly in China, Japan, and Korea. It is harvested in the spring months, sometimes extending into the summer. While green tea has been consumed in the Far East for thousands of years, it has only gained attention and popularity in the West in recent years.
What is Matcha?
Matcha is a green tea powder made from ground green tea leaves grown in the shade to achieve a specific flavor and vibrant green color (the reduced sunlight leads to an overproduction of chlorophyll). Before grinding, the stems and veins are removed, giving the powder its exceptionally fine texture.
Wild Orchard's green tea powder isn't called matcha because it's made from green tea leaves grown in full sun without shading and harvested in late spring. It's also not destemmed, so it contains all parts of the leaf. While it has a much more bitter and herbal flavor than matcha and lacks the vibrant green color, it's extremely nutritious because it contains the whole leaf.
Why drink matcha instead of green tea?
